Question What's for dinner?

I do not know about you, but Mondays are my toughest day of the week to come up with something for dinner. Usually I have overindulged over the weekend, so I crave something light on Mondays. I thought it might be fun if we all share what we are cooking or eating for dinner tonight!

Hmm. I will be having chicken & rice. And the baby will be having... chicken & carrots. and the hubby.. well he's on his own. (:

We had a light dinner.. Pasta salad with veggies and light sun dried tomato dressing.

Our Monday nights are one steamed artichoke a piece and an arugula salad with fresh heirloom tomatoes and Buffala mozzarella (Lupara Brand from Publix...they fly it in from Italy weekly!) drizzled with a little o/o and s+p....Enzo gets his own artichoke...his favorite meal of the week! I make an extra artichoke to take to work the next day.

Well....after reading everyone's healthy Monday dinner posts, I am reluctant to post ours. Monday night the local pizza place has a special that is too easy and affordable to pass up. Some people have pizza on the weekends but not us...Mondays. I have more time on the weekends so we actually eat more healthy over the weekend than during the week.
